Dried Limes, also called Limoo Amani or Noomi Basra among other names, are limes or lemons that have been boiled in salt brine and then left to be dehydrated.  Long a favorite in Iranian and Middle Eastern cuisine, Dried Limes are typically used whole in stews, soups & rice dishes or ground and used as a pleasant spice. Additionally, they are also used to make a very tasty tea. Although they might look awkward, Dried Limes have a delightful citrusy smell & an interesting and unique combination of salty, sour yet earthy taste, which can transform a dish into something completely new. Once you start using Dried Limes in your food, its going to be hard to go back!
